Cottage Cheese Pancakes

A family recipe

Ingredients:
1/3 cup canola oil
6 large eggs
12 oz lactose free cottage cheese
1/2 cup flour
1 banana (diced)
1/4 cup frozen blueberries


The recipe:
1. Combine canola oil, eggs, cottage cheese and flour in a blender.
2. Blend until mixed.
3. Add frozen blueberries and bananas, mix until combined.
4. Preheat griddle at medium heat.
5. Spoon batter onto hot griddle, flip when bubbly.
